Black Bean Dip

I have made this 3 times this year already. I will probably be making this once a week for the rest of my life.

This recipe also came out of the Healthy Foods Cookbook by Leanne Ely, CNC


1 can black beans, canned, drained
1 can green chili peppers, drained
1/4 cup salsa, use what you have
2 tsp cumin
1 tsp garlic, pressed
1 squeeze lime or lemon

Dump it all into a food processor and whir like mad. When it's one, blop it into a bowl and serve with any type of chip that turns your key. But preferably with a healthy one you made from these recipes. (I'll post the Dip Chips recipe next.)

In the book, there's a comment by "The Beaver Family" with a suggestion that you can roll up the leftover dip on tortillas for lunch, and add more salsa and some sour cream if you would like...

Yummy Yogurt Bowl

Got this recipe out of Healthy Foods by Leanne Ely, CNC.
Timmy & I both LOVE this! Truly YUMMY!!!

This is the "recipe" that Serves 4
I don't usually mix this much up at one time.

2 cups nonfat yogurt
1 cup frozen blueberries, or any berry
1 banana, sliced
1 cup granola - you could also use Grape Nuts cereal. In any case, use low-fat.
1/2 cup raisins
2 Tbsp. honey

In a large mixing bowl, mix together all ingrediants. Don't thaw blueberries - they are wonderful to eat crunchy and frozen like that. Divvy up and serve.
About 345 calories per serving
(It's going to vary depending on what ingrediants you actually use of course...)

I do use 1 whole banana no matter how much of the other ingrediants I use though. I've been buying Stonyfield Farm Organic Plain Non Fat Yogurt. The granola that I've used is "Bear Naked" - There are several varieties of Bear Naked Granola & the ones I've tried are wonderful (Original, Blueberry Walnut with 5 grams of protein per serving, & Banana Nut). I usually leave the raisins out, b/c Timmy doesn't like raisins. I do LOVE the frozen blueberries in it. I haven't tried it with any other kind of berry.

I have made this the last couple of times without the blueberries & used 'Mango Agave Almond' granola & it is AMAZING! (Tried to leave this as a "Comment", but couldn't for some reason...)

Bean Dip

2 cans Black beans, drained & rinsed

OR

1 can Pinto beans

1 can Black beans, drained & rinsed

OR

2 cans Pinto beans


2 cans White Shoepeg Corn

2 cans Ro-Tel (diced tomatoes with green chiles)

1 bunch of green onions, chopped

(Use green & white parts of onion)

1 lime juiced

Optional:

½ bunch of cilantro minced


Dump into bowl and serve. Enjoy! Repeat!


I drain ALL items I put in. As it sits, it will get juicier, so don't be afraid to drain all the juice at first.


Garnish with slice of lime on top :-)
